Einen Hecht in Mandelsotte mit oepffeln vnd mit zwiebeln etc. Nim ein gutt Theil zwiebeln vnd einen Apffel schneidt sie fein klein geuß wein darauff laß wol sieden das sie fein weich werden darnach nim mandeln ein gutte große handuol mache sie rein als dan gestossen das sie fein klein werden nim sie wieder auch aus den moersell thue sie in ein Reibasch wen du sie wol gerieben [86v] so nim die zwiebeln schlag sie durch ein durchschlag vnd reibe sie mit den mandeln wol durcheinander vnd wens gerieben So treibes wieder durch ein durchschlag nim dieße brue so du von den zwiebeln abgegossen wieder darzu thue ein wenig wein darzu aber es muß ein feiner dicker sott werden wurtz es ab mit zucker vnd zimmet als dan setz es bey laß wol heiß werden doch Nicht das es seudt nim darnach den hecht Reiß in nim die farb heraußer thue sie auff ein brettlein Thue auch ein wenig von hecht ohne gretten darzu hacks klein vnd wurtz es ab mit Pfeffer vnd saltz es vnd wasch den hecht fein sauber aus so er zu schnitten ist spaltte in zwischen der hautt vnd fleisch ein wenig auff vnd fulle in damit als dan mache in fein blaw vnd seudt in fein scharff aus den saltz abe vnd wen du in wilst anrichten lege in in ein schussel vnd geuß die brue daruber so ists recht etc.
