Einen gueten vnndt Seltzamen Braten vonn Eyern zumachen etc. Nehmett vngefahr 12 oder 15 Eyer Auch mehr oder weniger darnach der Braten groß oder Klein werden soll schlage sie Auf thue sie in ein topflein [144v] quirle oder Klopffe sie wohl hacke Petersilligen grunes oder Andere gute grune Kreuterlein vndt menge es darunder wurtze es mitt Ingber geriebenen mußcaten wenigk Pfeffer vndt Saltz will mann es Aber gerne Suesse haben So thue zucker ziemett vndt Kleine Rosinlein darunder zuuor Aber mache ein Secklein von Kleiner leinwandt 1 1/2 viertel lang vnt 1/2 Viertels breit geus die zugerichten Eyer darein vndt henge das Secklein Als baldt in ein heiß Siedendt wasser biss es dicke wirdt Als dan drenne das [145r] Secklein An einer seiten Auff thue das gesottene herauß das es nicht zerbreche nim dan das weiße von hartt gesottenen Eyern schneidt es fein lengelichtt wie Speck vndt Spicke den braten damidt darnach mache eine geschmeltzte Butter Wohl heiß vndt braun in einer geraumen Pfannen oder tiegell besprenge den Braten Außwendigk mitt gemengten Ingber vndt Saltzs lege ihn gemach in das heiße schmaltz geus mitt einem loeffell das heisse schmaltz offte daruber wende ihn [145v] gemach vmb vndt vmb Laß ihn darinne braten biß er Allenthalben fein braun wirdt geus den das schmaltz dauon Richte den Braten in eine schussell Ahn vndt mache ein gelbes braunes oder nur ein Pfefferbruhelein darunder So Siehett Er Rechtt wie ein Wiltbraten Ehe Er Aufgeschnitten wirdt vndt ist ein Seltzames vndt guett Essenn etc.
