Grunen Lachs Salmenn Oder Reingken Abzu Sieden etc. Nehmet den Lachs Reißet denn Rucken gantz darauß den behalt [101v] zue braten mache dan feine schmale Stucklein Aus dem lachs vndt Stecke durch ein Iedes Stucklein Ein Klein hoeltzern Speilichen das Er im Sieden nicht zurbrichtt vndt lege es eine weile in frisch wasser die Rengken oder Salmen Aber welche Kleiner Reiß durch Aus mitt den Rucken vndt mache Stucken darauß wie mitt dem Lachs Wasche die Stucken den Auß Legs in eine mulden oder Ander gefhes Laß vorseigen vndt geus den einen Essigk daruber So werdenn die Stucken fein blaue In deß [102r] setze einen Kessell oder großen Fischtiegell vbers feuer geus Ihn vber die helffte voll mitt wasser vndt ein meßlein Essigk darzu darnach der fisch groß ist Saltze das wasser Aber nicht zu hartte Wan nun das wasser heiß ist darff Aber nichtt Sieden So lege den fisch darein vndt Laß ihn fein geraum vndt Langsamb etwan eine Stunde Sieden hebe ihn den vom Feuer vndt Laß ihn in der Bruhe vorkuhlen darnach So hebe Ihn Aus dem Kessell [102v] oder tiegell Lege ihn in ein tennen oder hoeltzen gefhess geus die Kalte Bruhe daruber vndt Lege viel Petersilligen grunes daruff So bleibet der fisch lange frisch vndt guett man magk ihn Auch wohl in halb wein vndt wasser Sieden wie man will Soman ihn nuhn Speißen will So richte ihn Ahn geus einen guten Wein Essigk darahn oder darunder vnndt streuhe geschnittene Petersilligen grunes daruber Also Kan mann grunen Stoer vnndt [103r] welß Auch Absieden vndt Als dan eine gelbe mandell bruhe oder Braunes Soedtlein darubermachen etc.
