Manndel Kaesz Denn mach allso Nim ein mandlmichl die gahr schoen gesiegen ist mueß auf ein Pfundt mandeln whol 4 Loth haußenblatern haben damit mans sterckh man mueß am ersten die haußenblater Inn waßer sieden vnd mit demselbigen waßer muest die mandlmilch durchtreiben etlich nemens denn mandl dickh doch durchgeschlagen daß durch ein Sieblein geeth aber geth vngern durch oder durch ein Pfefer Pfann die nit kuepferig sey mit haußenblater gesterckht Ehrlich zuckher darein Seudß also lanng Allß zwey Ayer dann so geueß Inn ein form da man die Ayer kaeß eingeuest Setz da es kallt hat so gesteets so es gestanden ist mustu den mandl vnden in ein haiß waßer heben so geths gern herauß Richts an vf ein schuessel vnnd [11r] geueß ein kallte mandlmilch daruber darf Nit mit haußenblater gesterckht sein geueß souiel Milch daß vber die keß gehe so Sicht man den form deß Kehs Nim etlichen zuckher
