Ein ander gelbe Hecht gallert etc. [96r] Nim hauß blaße geuß wein vnd essig darauff als dan laß es eine stundt weichen setz es bey vnd laß fein gemach sieden vnd wens wol gesotten das die blassen weich sein so nim ein hecht zu Reiß in vnd schneidt in vff stucken wesch in sauber aus thue saltz in ein keßel wie du meinest das der hecht genug habe lege den hecht darein geuß waßer darauff nim die selbige brue mit essig wein vnd hauß blaße laß sie durch ein haeren Tuch lauffen geuß sie zum hecht setze in vber laß in gemach sieden wen er wol gesotten hatt so wurtz in abe mit Pfeffer saffran vnd zucker laß gemach mit auff sieden doch das genug brue bleibet damit du die fisch begissen kanst wen er gesotten geuß diese brue wieder daruon eben in ein solche Ehrne buchse wie hieuorn gemelt allein du darffst keine wurtz darein Thun lege den hecht kaltt aus laß die brue stehen das sie fein kaltt wirdt vnd fein klar darnach lege den hecht in schusseln geuß die brue fein gemach abgezapfft daruber her nim gestreiffte mandeln vnd lege sie An den Randt herumb ehe die gallertt gestehet mitt auch zwischen wie die klee bletterlein so ist sie Recht etc.
