Auff ein Andere artt weisse gallerten zumachen von Copaunen [31r] der Neme einen Kopaunen oder zwen darnach er vil Notturfftig ist zu machen vnd Neme darnach die selbige Kopaunen vnd hacke sie fein gar Clein vnd thue sie in ein saubern topff vnd Angefueltt mit einem lauttern vnd guten wein vnd laß sie gar wol sieden vnd sauber abscheuenen Allso lanng das sie ganz wol ersotten sein darnach Soll man die Feiste fein Sauber abnehmen vnd die vbrige Supn durch ein Saubers streich tuch lauffen lassen vnd darnach wider in einem sauben topff zusetzen vnd abgewueertzt mit einem gannzen zimmet vnd mit einem schoeenen weissen zucker wolgeschmackt Abgemacht darnach abgeferbet gehl weiß oder roth wie es dann einem gefellig ist darnach [31v] denn gantzen zimet wider heraus genomen vnd daz weiss von 5 oder 6 frischen Ayern vnd das fein zuerschlagen das es Auffgehet wie ein Schaum vnd das in die Sueltze fein eingerueeret das Nimbt das feist vnd wierdt schoen lautter darvon vnd laß mans durch ein Sulzsackh lauffen vnd fein heiss eingegossen in die Schuessel darnach seze man es An einen Kueehlen ortt das es gestehet will man Aber die gallertten mit fleisch haben mag man ezliche stueckhlein vom hun darein legen lassen vnd Supen fein vber hier giessen vndt also stehen lassen
